MACAU, November 11, 2016 (Friday) - The inaugural Michelin and Robert Parker Wine Advocate Gala Dinner: A Sensorial Gourmet Journey, with the support of Official Title Partner Melco Crown Entertainment, unveiled Michelin Guide Hong Kong Macau 2017 Dining series in front of hundreds of government officials, hospitality industry professionals, socialites, media and members of the public at Studio City, Macau this evening.
Director of the Macau Government Tourism Office (MGTO), Maria Helena de Senna Fernandes, joined the gala event as the Guest of Honor. MGTO is the Official Supporting Entity of the Michelin Guide Hong Kong Macau 2017 Dining series.
This exclusive gala event featured a unique menu put together by seven international chefs – Shinji Kanesaka (Tokyo), Guillaume Galliot (Macau), Björn Frantzén (Stockholm), Tam Kwok Fung (Macau), Hideaki Matsuo (Osaka), Alvin Leung (Hong Kong) and Pierre Hermé (Paris) – six of whom are recognized by the Michelin Guides, in tandem with a theme entitled “SENSES”, exclusively conceptualized by world-renowned Hollywood creative designer, Manuel Albarran. “SENSES” certainly lived up to its name, and invoked all five human senses through a series of special presentations featuring elaborate costumes, immaculate choreography and refined performances.

Another key highlight of the event was the acknowledgement of well-known Hong Kong actor, foodie and television chef - Nicholas Tse - as a “Friend of Michelin”, in recognition of his contribution to the culinary industry. During the Gala, Tse presented the amuse-bouche of the night - Senses of Fall, a light vibrant gazpacho of roasted bell peppers, tomatoes and cucumbers, which he specially created and prepared for the event.
Tse said: “The simplest ingredients are often the hardest to work on. In my cooking, what I really like to do is to explore and present different cultures, flavors and culinary elements. My dish for the gala brings together vegetables from different parts of the world, including tomatoes from Australia, cucumbers from Spain, red and green peppers from Holland, as well as banana shallots and garlic from France.”
He further added: “I have assembled these simple ingredients in a shot glass, and presented it in their finest form. To complement the gazpacho, I have reinterpreted the different flavors of my cookies into fallen maple leaves, to have them remind you of the colors, smells, and flavor of this season we are in.”
Throughout the sensorial gourmet journey, Manuel Albarran took his highly stylistic costumes, specially designed using unconventional materials, and combined them with contemporary choreography. Each sense was brought to life with stunning visual imagery, energetic dance moves and even smell as aromas were pumped in.
For the dinner, each of the seven acclaimed chefs created a dish that was paired with a highly-rated Robert Parker Wine Advocate reviewed wine, including a special selection of Petrus wines as well as the very exquisite Quinta do Vallado ABF Old Tawny Port 1888.
Soon following the Gala Dinner will be the third event of the International Chef Showcase featuring Curtis Duffy from the three-Michelin-starred Chicago restaurant Grace. Chef Duffy will make his Macau debut at City of Dreams’ two-Michelin-starred The Tasting Room from December 1-3.
